Water in the bottom chamber heats, pressure pushes it through the coffee in the filter basket, and brewed coffee collects in the top chamber. The octagonal aluminum body heats evenly on gas and electric stovetops. The 3-cup and 6-cup sizes are the most popular. Bialetti Brikka — Best for crema. The Brikka adds a weighted pressure valve on top of the brew chamber that builds pressure before releasing the coffee in a burst. Moka pot sizing

Moka pot "cups" are 1.5oz (45ml) espresso-style servings. A 3-cup moka pot produces about 4.5oz of strong coffee — roughly one double espresso or one small American-style coffee when diluted with hot water. A 6-cup produces 9oz. A 9-cup produces 13.5oz. Think in ounces, not cups.

Buy the size you'll use at full capacity. Moka pots are designed to fill the water chamber to the safety valve and pack the filter basket fully. Running a half-filled moka pot produces weak, under-extracted coffee because the water-to-coffee ratio is wrong and the pressure dynamics change. If you sometimes want one cup and sometimes want three, own a 3-cup and a 6-cup — they're cheap enough to justify having two.

Care and maintenance

Never use soap on an aluminum moka pot. The thin layer of coffee oils that builds up inside the chamber (called seasoning) actually improves the flavor over time by eliminating the metallic taste of bare aluminum. Soap strips this layer. Rinse with hot water and let air dry after each use. If you see white mineral deposits, a vinegar soak dissolves them without damaging the seasoning.

Replace the gasket and filter plate annually. The rubber or silicone gasket creates the pressure seal between the two chambers. Over time it hardens, cracks, and loses its seal — you'll notice steam hissing from the joint and weaker coffee. The filter plate above the coffee basket can also clog with fine particles. Both are inexpensive and easy to replace — unscrew, swap, rescrew.

Don't put aluminum moka pots in the dishwasher. The alkaline detergent and high heat of dishwashers strip the seasoning, pit the aluminum surface, and discolor the pot permanently. Hand wash only. Stainless steel models can handle occasional dishwasher cycles but hand washing extends the gasket life.
